How We Got Here

2019

Two Chefs Meet

A late-night food market in Los Angeles. A heated argument — birria or tonkotsu? Neither would budge. By 3am they were sharing a table, a bottle of mezcal, and the germ of an idea that would change both their lives.

2020

The Pop-Up

A borrowed parking lot in Boyle Heights. Fold-out tables, a single generator, and 60 bowls of Tonkotsu Birria Ramen on a Friday night. The line stretched around the block by 7pm. They sold out in under two hours.

2021

The First Kitchen

Twenty seats. One open pass. A hand-painted sign above the door that read 'FUEGO & NORI — Enter Hungry.' Their tiny spot in Brooklyn's Greenpoint neighborhood landed on four Best New Restaurants lists before the paint was dry.

2022

Going Viral

A single TikTok — forty-seven seconds of a birria ramen reveal, shot on an iPhone at midnight — hit 12 million views in 72 hours. The reservation line went from two weeks to four months overnight.

2023

The Expansion

A second location opened on the Lower East Side. The catering arm launched. Somehow, despite all of it, every bowl still gets the same obsessive attention it did in that parking lot in 2020.

2024

Award Season

Named 'Best Fusion Restaurant' by NYC Food & Wine. Included in Eater's 38 Essential New York Restaurants. They accepted both awards, framed neither, and got back to work the next morning at 6am.

The Philosophy

Cook with Memory.
Serve with Fire.

We don't believe in "fusion" as a gimmick. Every dish on our menu exists because two memories — one from a Mexico City kitchen, one from a Tokyo ramen stall — found each other and refused to stay separate.

Our guiding principle is simple: if your grandmother wouldn't recognize at least half the ingredients, we've gone too far. If she'd recognize all of them, we haven't gone far enough.

We source obsessively. We prep slowly. We cook fast. And we believe the best meals are the ones that taste like somewhere you've never been but somehow already know.

Born in Mexico City, trained under two Michelin-starred chefs, driven entirely by the memory of his grandmother's mole negro.

Co-founder & Head of Craft

Raised in Tokyo's Shinjuku ward, spent eight years working ramen stalls before earning a stage in Copenhagen. Obsessed with texture.

Sofia Lara, pastry chef

Pastry & Fermentation

The quiet force behind every dessert and house-made vinegar on the menu. Her chipotle-yuzu tart has a six-month waitlist of its own.

Daisuke Mori, head of broth

Daisuke Mori

Head of Broth & Stocks

A former biochemist who left a PhD program to pursue the science of flavor. The tonkotsu base is his life's work, revised daily.
